    Soups and stews

Getting to be that time of year. We are at about 20% color in the trees, so that might tell you what weather we are having.

Last night the wife made up some tortilla soup that blew my socks off. It just reminded me how much I love soups/stews when the weather gets cool. This winter I'm going to try and find a good Pho recipe.

Agreed...about the soups/stews. That's a pretty good review of your wife's tortilla soup. Is she willing to share the recipe?

I look forward to fall/winter recipes too.

Seems it was in kit form.

She purchased it locally. As good as any home made I've ever had.

I'm always game for a good Hot Beef Stew, Mike's at the top of the hill just east of the RR over pass on West 16th near the Speedway has been serving a great one for half a century or more.

My daughter brought over some french onion soup recently that may just be the best soup I've ever had. With a bread slice kinda thing in it and melted cheese on it. Fantastic.

Came across a really interesting Stew recipe on cooks.com. Reviews are really worth reading if you plan to make this.

Hmm. It looks a little labor intensive but that might make a great dinner for Christmas day.

Well...since I pizzed Ren off by posting a thread in the wrong forum , I decided to come home and make chili (cooking relaxes me). I ended up trying to commit suicide by tomato. I almost did it until my Wife calmed me with assurances that it is only a fruit. I write this off to being upset over getting Ren all upset.

I was crushing canned whole tomatoes by hand when one of them exploded at me. I thought I'd been hit by a deer hunter and dropped. Thankfully Barbara came through with important information.

I hold no grudges against you Ren...

no cheesehead.. Well not yet anyway. But the beef soup did have: steak, corn, carrots, potatoes, n green beans. Probably some tabasco or something too as it had a bit of a kick to it.. guess i was in the mood for beef soup n didn't have a can of it.

I did that with a frozen pizza one late night. Woke up to black streaks on the outside of the oven (where the smoke escaped) and a little black disk in the oven. Which reminded me, it was time to change the batteries in the smoke detector.

Bottom of the thermometer is about to fall out this week. Big pot of chicken soup made on Saturday goes on the stove tonight. Yum.

Kind of on a similar note, when we've been roasting chickens lately, we are then using the carcass to make chicken stock, then tossing in the freezer in 2 cup amounts to use whenever needed. Darn tasty and makes the house smell yummy.

My wife makes fantastic veggie beef soup! And I love veggie beef soup!!!

So... my father makes prime rib for Christmas dinner, and I sliced it up & placed it on the plates for for everyone for dinner.
While doing so I snagged up all of of the bones, scraps, fat, etc & bagged it up to take home.

So Sunday morning as she was starting her veggie beef soup I put all of the leftover prime rib in pot & cooked it in there for several hours.

That was the absolute BEST veggie beef soup I have ever had. Just incredible!!!

Made Chili this weekend as it was suppose to get down into the 40s, gonna follow it with my Homemade Dirty Rice today.

But back to the chili, it was great... I found a place near here where I can get really good tamale's so I was serving it "Nick's Chili" style.

I'm sure we'll get back to doing those things, but we are living in a 25x25 cabin until spring when our new home is ready. Anything we cook pretty much smells up the house (in a good way), but also our clothes. We keep the bedroom door and closet closed but it still seeps in. So we keep the roasting and such to a minimum (too cold to open windows). Also, all we have is a small refridgerator and freezer. One of our sons-in-law is keeping a half a hog and a quarter beef until our big freezer can be plugged in again (too many wolf around to leave outside in coolers).
I can't wait for a full size kitchen where we aren't in each others way all the time!

    Here's a recipe I've been eating a lot lately:

1 package powdered extra noodle soup mix (I've been using Lipton Soup Secrets mostly, but have had good results with Mrs. Grass as well) prepared per package instructions.
Shredded Cojack cheese (anywhere from a sprinkling to a few handfuls, per individual's taste)
Oyster crackers (as above, add to taste - remember to let them turn soggy before eating if you're on a soft diet)
    Salt and Pepper to taste

It's awesome, but leaves the spoon a bit messy.

Making a batch of Turkey Chili today. This is the second time around on this recipe. The first time fell in love with it and almost tossed all other recipes we have.
