Thread: Right now in my crockpot

    Right now in my crockpot

    Bought about a 1lb of chicken breast filets on sale
    seasoned with garlic salt and Lowery's
    put in crockpot and added

    1 can cream of mushroom soup
    added about 1/2 can of my homemade yogurt
    1 can red enchilada sauce
    1/2 jar + of Monroes green chili sauce
    some chipolte peppers.. ( never used before, who knows?)
    1 whole jalapeno diced....

    so when the chicken is nice a done, I will shred and cook some more...

    right now the "gravy" is awesome!

    Sounds good. But once you cook some more, then what? Enchiladas? Eat as is like a Chicken Chili/Stew? What's the final plan?

    Ha , not sure, I have not thought that far ! Actually, I was thinking enchiladas, and/or soup... the broth is spicy, but smells amazing.. it has a lot of liquid, so I can probably use for both..... I have never used chipolte peppers before.. I will now keep them on hand.. love the slow and low smokey heat... then Bam!

    They keep in the fridge for a good while. Any unused leftovers in our house usually end up in omelets.

    3 pound chuck roast with celery, onions, carrots, red wine and a powdered gravy mix for tonight.
    It's odd munching on onions at 6:15 AM and yet satisfying.

    I made this today. It was excellent. Added black beans & onions to give it more substance and served over white rice. Very good!

    Let me know how you were able to obtain beej's homemade yogurt, willya?

    I've heard it's available, but only for a short time and with shipping/handling and such, I thought it hard to get.

    Yesterday for our St. Patrick's day dinner my wife slow cooked this in our crockpot...


    And I jumped in a threw together and baked this Irish soda bread...

    looks yummy Davydd.. I did the receipe yesterday that used 4 lbs corned beef, 1 cup of brown sugar and a can or so of Guinness stout.

    pat the corned beef with the brown sugar, put in crockpot, slowly pour at least half of the stout over the meat.. cook forever.. add cabbage, potatos etc. if you wish.. add more beer if needed..

    Just really good stuff...
