    Eggs anyone?

    I've had enough over at the IndyCar forum for a bit. Need to be back here in my real comfort zone (food and humor).

    So's anyway, how do you like 'em?
    I prefer poached if I have the time, otherwise I like dippy over easy (lately we've been on a marble rye toast kick). I like "Cheever" eggs (a reference from my Mom's maiden name) which are flat and hard, but only on an egg sandwich. Scrambled if in a hurry or wrapping in a tortilla. Hard boiled for an easy snack or to devil. We tried some baked eggs a while back but really don't have the kind of cups needed. Coddled look intriguing to me...something I might have to try.

    So as you can see, I purty much love eggs (My uncle was an egg producer in Sulphur Springs, IN. so I kind of grew up on them).

    For breakfast I have eaten them over-easy since I can remember. However I do recommend soft-boiled once in a while for a change.

    Over easy with hash browns
    Scrambled with cheese with grits
    Fried with cheese on toast for a sandwich
    Omelet with ham, cheese, bacon, cheese, chives, cheese, tomato, cheese, salsa and cheese
    Poached on salads
    Hard boiled with salt shaker
    Deviled as many as possible - Cool Hand Luke style

    I'l eat an egg just about any way you can fix it. Except a Balut, that is the most vile thing that has ever passed my lips!

    Lately, I've been eating Egg Beaters. Don't knock em until you've tried them. Only 30 calories, 0% cholesterol, 0% fat.

    Other than that I love deviled eggs. I make great deviled eggs.

    I love eggs no matter how they are prepared.

    I forgot how to prepare a soft boiled egg but I used to love them.

    Love eggs about any way.

    Poached or softboiled with a little salt and fresh ground pepper. So simple, so good.

    Scrambled or in omelets allows for a variety of delicious flavors.

    Over easy with mustard and hot sauce, wash down with peppered tomato juice.

    Eggs Benedict is probably my favorite "fancy" breakfast.

    And, my deviled eggs would probably kick Snow61's deviled eggs butt.

    My brother-in-law is a master chef, and recently taught us how to boil an egg properly.

    Start with the eggs in cold water. Put them on the stove until the water begins to boil, then turn off the heat and cover the pot.

    Let the eggs sit for 10 minutes for hard-boiled, 8 minutes for soft-boiled. You may want to adjust these times by a minute or so depending on the size of the eggs.

    Immediately dump the hot water, and rinse in cold water. Then, put lid back on the pot and shake from side to side until all eggs are cracked. It turns out that boiling an egg releases some kind of gas that turns the yolk greenish. Cracking the shell right away eliminates this prolem.

    Try this, it works, and makes the best boiled eggs you've ever had.

    I also make really good scrambled eggs, and this without any help from anyone. I add half-and-half and Lowrys seasoned salt, then cook over medium heat while constantly keeping the eggs moving so they cook evenly and come out fluffy. Nothing earth shattering, but very yummy.

    Caviar must be good, but I've only tried it once and wanted to spit it out. Fishiest thing I ever tasted. Wouldn't mind trying it again. Was never stationed in the PI, but worked with a Filipino who introduced me to many new dishes, including balut which I didn't care for. And I have started putting ketchup on my scrambled eggs again, something I haven't done for 30-40 years!

    My wife loves to do the holiday meals and only recently "allowed" me to do the deviled eggs.

    I put a slice of pickled jalapeno on them or a slice of pimento olive (standing up). She approved and I was stunned!

    eggs over easy on top of rosti potatoes

    Pickled eggs

    deviled eggs

    egg salad

    and if I go for healthy omelet
    2 egg whites ( no egg beaters just toss the yolks or give to my dog)
    1 whole egg
    beat and put in my Redi Set go
    add steamed brocoli garlic salt, onions and green chilis f

    ooo...I forgot about scotch eggs and egg salad.

    Broadripple Brew Pub has scotch eggs on their menu. Had one at the Fishers Ram Brewery one night during a beer tasting. Not on the menu, it was the chef's family recipe he did for the night.

    Old bar in San Francisco, can't recall the name, but if you order a 2 chicken dinner and you get a double yolk pickled egg.

    Have never had a scotch egg. May have to try to make those sometime.

    Everyone that has ever had one says I make the best egg sandwich ever. I can use Crisco, canola oil, olive oil. It doesn't matter. I don't know how but it just happens.

    My wife loves egg sandwiches. For the most part she is a pretty simple person, but when it comes to those she is insanely particular...right down to the order everything is put on it.

    My first stab at Scotch Eggs turned out pretty good...



    No card at the moment, so didn't have memory left in my phone for the "after" pics.
