If you really take the time to find out about this stuff, you'll notice that it gained wider use when the GOVERNMENT started mandating that meat providers document the percentage of fat in a product. Government forced even the best meat processors to use this stuff incrementally to assure that their meats were X% fat content so they would not get fines for having too much fat content in their products.
If you've ever eaten a hot dog or bought a processed meat advertised as X% lean/X% fat you've likely eaten some pink slime.
Personally, it doesn't bother me too much. I mean I wouldn't purchase a pink slime steak, but I'd rather eat most processed meats here in the US than a lot of the stuff I've seen in other places around the world.
