    Spanakopita

    Had to look it up didn't ya?

    My daughter brought some over that she made (first time). I don't even like spinach and these were delicious. I said to my wife that our daughter may very well be the best cook I know, and that's saying alot.

    My next door neighbors owned a deli and they would make the spanikopita at home to take to the shop with them...they would always invite me over to have a piece and a glass of wine. There's nothing like spinach and phyllo dough and cheese...mmmm

    Actually my wife makes Spanakopita fairly frequently ( no real choice on my part since she is a bit of a feta cheese addict ) and though it took me a while to acquire a taste for it , it is delicious.

    Actually my wife makes Spanakopita fairly frequently ( no real choice on my part since she is a bit of a feta cheese addict ) and though it took me a while to acquire a taste for it , it is delicious.
    LOL, I have no complaints on my wife's cooking, but we both know it is no contest. My wife was a horrible cook when we got married, thank God we lived near a pizzeria.

    I LOVE spanokopita! The Greek Orthodox Church here in Cincinnati is only 10-15 minutes from our house. They have a bake sale around the 1st or 2nd weekend in December, selling Greek pastries AND spanokopita. OMG, Mom and I go crazy over the pasties and we buy a couple of trays of homemade spanokopita. It freezes well and, IMO, goes great with tomato soup. Dad even liked it and he was more a "meat/potatoes/bland food" kinda guy.
    (and no, I've never been to the Panegyri summer festival).

    I was hoping you were going to post that it was this weekend for the Festival. I haven't been to Kroger yet since coming home from vacation and the spanokopita would have been awesome.

    I make pretty decent spanakopita - since acquiring a microplane grater, a clove or two of garlic grated into the spinach is an amazing touch - so much different than additing chopped garlic...

    That's what is going to make you a great cook! You learned how to make something go from good to great! You added your own touch to it. All good cooks add their own special something to whatever they are making. You'll make a great husband some day!

    I live in a neighborhood that's pretty heavily Greek and Armenian, and I love it. I can get spanakopita from a couple of places around here. It's awesome.

    Why, thank you! I am flattered

    I have been steadily improving my cooking lately, the young lady who I am courting is vegetarian, so that has made me expand my selection of ingredients and how to cook them - I decided at the very beginning not just to serve her stuff without meat or tofu chunks. It gives me a lot of satisfaction to show up at her apartment after work with dinner ready or to leave a surprise dessert in a bag on her car window for when she closes.

    Unemployment has it's benefits...

    The first one is definitely spanakopita, although if you wanted to make it easier on yourself, just bake it in one big layer and cut it.

    The second recipe is more akin to a Turkish Burek than Greek Spanakopita, given the inclusion of meat. I have never seen a spanakopita with meat... sounds tasty anyway.
