    Taco's

For Father's Day, I'm gonna treat myself to homeade taco's. Both slow marinated pork and garlic/cilantro flank steak. Maybe a little ground beef for the kids. All of which must be served on freshly grilled soft corn shells with pico, valdia onions, more cliantro, and a tad bit of lettuce for crunch.

Gonna also make some fresh salsa (in the Chili's thread) with home fried corn chips.

    Hmmmmmmm......Yummy.......

I'd never had cilantro till I tried the local Mexican place's "Mexican Tacos". Wow! All they come with is a don't-even-think-about-using-too-much-of-it kinda green sauce, some diced onions, and, of course, the cilantro. Holy frijole. Only thing that could be better was if they did it with pork along with the beef and chicken.

Once a year (or so) I make tacos al pastor. It's just about the greatest damn thing ever. Come to think of it, it's getting close to time for another batch!

Cilantro is fantastic with scrambled eggs and tomatos. Even better, roll that up in one of your left over taco shells for a yummy morning surprise.

Add some chorizo or hot breakfast sausage for the non-vegetarians among us.
