    it's what???? :)

    just a couple of thoughts to share about food......

    most here know that i am a widower living alone and making do ok with the "domestic" side of things.. you know, the chores and cooking n such.. i mean golly gee, i certainly can't afford to go out to eat all the time, nor would i want to..

    soooo, here's the point.. i like cooking and i don't mean just lighting up the grill and burning stuff.

    sometimes in order to use all of the stuff in the frig up before it goes into the trash, i somewhat alter what may be a traditional dish..

    here's an example: i had bell pepper, fresh jalapenos, and onion that needed to be used. i also had a pound of pink slime... so i threw it all in a skillet and fixed it up like i would a burritio or fajita.. then i added a can of "ranchstyle" beans..

    to serve this stuff, i took a basic cereal bowl and lined the bottom with tortilla chips, (i was out of flour tortillas to make a burrito/taco) cover those with some thin sliced sharp cheddar, a few spoons full of the mix, more cheese, another layer of chips, some sliced nacho jalapenos, then covered it all with shredded cheese.. tossed it into the nuke for 40 seconds to melt the cheese.. topped it with diced tomatoes, some chopped onion, sour cream, and salsa..

    hmmmmmmm baby..

    over the next few days, i also made variations of the "bowl".. sometimes using nacho flavored chips, or topping with avocado slices or guacamole..

    what types of unusual hybrid "meals" do some of y'all come up with?

    you have to clean the frig out somehow eh?

    I have a hard time looking in the fridge or pantry and just whipping something up from what's there. I'm a recipe girl. But I am getting better at finding recipes so I can use things up before they have to be thrown out.

    If I have veggies I need to use up I'll make a stir-fry.

    I on the other hand mostly like to just light up the grill and burn stuff.

    You sound just like Mr. Antoneli. If there's a big fire to be started, he's there.

    I kind of suck as a cook; I can follow a recipe but I'm not really great at thinking about what would go together. I can't just throw things together from scratch. I wish I could, because I LOVE cooking.

    Lunch was nothing really special. I had leftover tortilla shells and grated cheese. Combined with ham, mayo and snagged some lettuce and arugula from the garden and made a wrap.

    I was suddenly single again and the custodial parent of a three year old and my cooking skills had to greatly improve overnight and I did years of daily balanced meals mostly prepared in the confines of the kitchen but then my son went off to college and beyond and I've settled back into my old ways of stocking the frig with the finest cold cuts & cheeses and keeping hoagie rolls on hand for day to day and then comes the weekend where I mostly like to light the grill and burn stuff. I can still turn the skills back on when I have company but most of the time that also involves lighting up the grill and burning stuff unless I get a special request for my Manicotti or my stir-fry Cashew Shrimp.

    Retirement has it's perks... but retired and single has even more.

    My first fish taco involved left over taco shells, some day old home made salsa, and fish sticks.

    R22 what you created is pretty much what we call "Taco Surprise". The surprise is whether or not we have taco shells, tortilla's or chips. Basically, I just use taco spices added to ground beef, throw in a can of black beans, a bag of frozen corn and keep adding out of the fridge. Cheese, black olives, green onions, whatever...it's Taco Surprise!

    I believe that was why I stopped going to Taco Bell

    Shell makes a "Mexican cornbread" that's basically regular Jiffy cornbread with anything remotely Mexican thrown in, and sometimes stuff that isn't Mexican that she threw in while she was thinking of Mexixo, or maybe looking at a map of Mexico. Then she bakes it like a casserole. Depends what's in it as to whether we're all able to eat it. Peej (Bigfoot) will eat almost anything, but sometimes it's so spicy even I won't eat it. Hell, the last time I think the birds wouldn't touch it when she threw it out for them.

    LOL, that's the spirit

    i've had skunks run away from stuff that ends up in the back yard.. but the intentions were good.. ell it was going in the trash anyway.

    I have a groundhog who lives in my storage barn. He loves when I toss food out to him in the backyard. So far, there's nothing he won't eat. He's been with me 4 years so far. Not bad for living in the city.

    My wife has become quite adept at finding things and turning them into something good. Just the other day she made paninis with stuff lying around. A bit of deli ham left over, some cheese, some salami we usually put on crackers, some fresh basil from the garden, tomatoes, "other things". They were really, really good.

    now serve covered with the bottom of a bag of shredded sharp cheddar
    in a flour tortilla with salsa or pico.. i prefer salsa and that jar of stuff needs to be emptied too..

    it worked for me
