    Ceviche

    Making up a batch as I type. Shrimp, Scallops, and Cod. 2 batches one in lemon juice the other in lime. One will be with red tomatoes, garlic, red onion, cilantro and jalapeno's.

    The other one is a verde, Tomatillo's, green onion, garlic, cilantro and serrono's.

    I think you live too far North to know anything about ceviche, but your recipes belie my opinion.

    Another good reason to toast to ex-wives. Cheers!

    Best ceviche I ever had was prepared by a Mexican divemaster on a rickety boat dock in a lagoon on the Chinchorro Bank with a conch caught less than an hour before.

    We were in Playa and ran into Fred Scheer (Scheer's Lumberjack Shows) from our hometown. He had caught a fair sized fish the day before and prepared ceviche. Oh...effin' YUM!

    Also had ceviche octopus which was equally as tasty!

    Even tho it is not true ceviche because the seafood is already cooked. Every now and then you see those mixed bags of seafood at Wally World. One of those mixed up with regular ceviche fixens makes a pretty decent one.

    And yes cheese, octopus is fantastic. The BEST thou if you can find it is Abolone!
