    Tenderloin virgin...no more!

    Okay...being from the West Coast, I had NO idea what you guys were talking about. Even from having visited Indiana, I had no idea (possibly an idea for a new Indiana State motto is in order here.)
    Anyway, after getting a tenderloin recipe from you guys here, I tried 'em and liked 'em.
    So, I'm here in Lima, Ohio visiting a friend. Driving through town, I pass "Happy Daz Drive In," which advertises TENDERLOINS!!!!
    I pull in, and experience my first, real tenderloin. And, with all due respect to the Pastor of my church in Nome, Alaska, it is, truly, the food of the Gods!!!!
    Thanks for the heads up on such a wonderful sandwich. I will spread the word!!!

    Ah yes . . . I remember my first time. You never really forget it. For me, it was in the shadow of the Pagoda on race day a few years back.

    Now you can take over the pursuit of the tenderloin and I can retire after 50+ years eating the dang things and go after the perfect lutefisk now that I am in Minnesota.

    My son and I hammered, floured, and marinated our first batch of loins, per your recipe, last night. We will bread them and let them rest shortly.
    One question; how do you drain them when you pull them out of the fryer?

    If you fry them at 360-375 degrees in a deep fryer they should pretty much drain dry holding them over the oil in a few seconds. The deep fryer basket can be set to rest above the oil. If frying in a pan just hold with tongs a few seconds until the dripping stops. You can also place them on a wire rack on top of a cookie tin. Generally I just put them on a serving platter. Properly fried they should not be too greasy.

    We will see. I had Iowa's best in 2006 and next week will sample Iowa's best in 2007 as judged by the Iowa Pork Board. But I have also had the best in Indiana and right now my top three are from Indiana. I can say that from taste experience.

    My son, with a little help from me, made our first home made batch of TL sandwiches last weekend. We used Davydd's recipe and advice and they turned out GREAT!
